How many people have included to eat healthier in their new year’s resolutions? If you want to get going on that, try these super tasty, super easy and super quick quesadillas.
There is really no end to the possibilities of fillings for these quesadillas; the only essentials are tortillas, some kind of sauce, and some cheese. From there, the rest is up to you!
I used a yogurt-pesto sauce (three quarters plain, non-fat yogurt, to one quarter pesto) on a whole wheat tortilla and filled it with sliced chicken, shredded cheese and tomatoes. Fold over your tortilla and pop them in the oven at 425 degrees for about eight minutes and you’re all set. Doesn’t get much easier!
While not traditional, these quesadillas are great to make for a quick lunch, dinner or snack. It’s very easy to customize them with whatever ingredients suit your tastes!
Veggie ideas:
tomatoes, sauteed peppers, corn, shredded carrots, sliced mushrooms, spinach, chopped onion, avocado, sliced olives
Sauces:
salsa, tomato sauce, pesto, pesto-yogurt, sour cream, guacamole
Cheese:
any kind of cheese you like will do the trick!
Other:
black beans, chili, apple slices (seriously! with cheese it’s delicious!), meat (beef, chicken…whatever you’d like), tofu
