G&Ts baby! Happy Friday, friends. Let’s celebrate. Summer, an abundance of peaches, the arrival of the weekend, all good reasons.
Like my grandmother, the gin and tonic is my favourite cocktail. It’s actually Spain’s, too, apparently. And one of my favourite DJ’s. Won’t you join us for a drink?
I usually stick to some lime or maybe cucumber if I add anything to the classic cocktail, but I wanted to sip on peach season.
Peach Simple Syrup (makes a little over a cup of syrup)
1 cup water
1 cup sugar
2 peaches, pitted and chopped
Put all the ingredients in a saucepan and bring the mixture to a boil. Lower the heat and let the syrup simmer until all the sugar has dissolved. Remove from heat and cover, let it sit for at least a half hour (I put mine in the fridge overnight to really get the peachy flavour out). Let cool completely before using, and store in the fridge.
To make your peachy G&Ts…
Add about 1 tbsp of peach syrup with the chopped peaches into your regular G&T — I’d say about a shot of gin, topped up with tonic water (2oz gin + 4oz tonic?), but I wouldn’t disapprove of making that a double!
