I know, the title probably made you cringe. But I truly believe that brussel sprouts have a bad rap. These underrated greens are easy to dress up or down and make a great healthy side dish.

To serve up some holiday greens I simply cooked the sprouts and tossed them with some red walnuts, goat cheese, and a quick vinaigrette of olive oil, red wine vinegar, Dijon mustard, and garlic. Give these little veggies a chance this winter!
