Have you tried quinoa for breakfast? For all the times I’ve had quinoa I don’t think I had it for breakfast until yesterday morning. After a late night out, I was craving healthy food. I’m going to call this Quinoa Apple Pie Parfait, but it’s super-duper healthy. This is approximately what I threw in my bowl, but just like a good bowl of porridge or granola it is highly adaptable!
Quinoa Apple Pie Parfait
1 cup plain yogurt
3/4 cup cooked quinoa
1 apple, chopped into small pieces
1 tsp flax seed
1/2 tsp vanilla extract
1 heaping spoonful of brown sugar
1 tsp ground cinnamon
Put all the ingredients together in a bowl and enjoy! If there isn’t a nut allergy in your house, I would definitely add some chopped nuts to this combination…talk about (healthy) dessert for breakfast!
