Had to whip up some more chocolate Guinness goodness for St-Patrick’s Day! This time in the form of cupcakes with caramel Bailey’s frosting…
For the chocolate Guinness cupcakes I used the same recipe as I did for the Chocolate Guinness cake (1/2 of the recipe will make about 24 cupcakes)
And for the frosting I simply used 1 stick of butter (1/2 cup), 1 1/2 cups icing sugar, 4 tbsp cream, 1 tsp vanilla and 2 tbsp Bailey’s (I had caramel Bailey’s on hand, so that’s what I used) — beat it all together until it’s fluffy. (Made enough for at least 12 cupcakes).
