This recipe from Lesley Stowe (of lesleystowe.com) goes so well with pretty much any type of bread or cracker. A snap to make, it is light and flavourful. Perfect for breakfast or to serve at a gathering!

Lesley Stowe’s Smoked Salmon Mousse
Makes 2 cups
4 oz smoked salmon, lox style
10 oz soft cream cheese
¼ red onion, finely diced
1 small jalapeno, finely diced
1 tbsp capers, roughly chopped
1 tbsp fresh dill, finely chopped
1 tbsp cilantro, finely chopped
¼ tsp chilli sauce
2 tbsp lemon juice
In a food processor roughly chop the smoked salmon. Add the other ingredients and pulse until fairly smooth.

Variations:
Reduce the amount of cream cheese you use and add non-fat yogurt instead, for a healthy spread.
If you don’t want a little spice in your mousse, simply omit the jalapeno and chilli sauce; it will still be delicious!
If you don’t have fresh dill, dried is fine. Chives also blend well into the mousse.

Serve with crackers, bagels, baguette…the list goes on! Enjoy!
