Smoked Salmon Mousse

Lesley Stowe’s Smoked Salmon Mousse

Makes 2 cups

4 oz smoked salmon, lox style

10 oz soft cream cheese

¼ red onion, finely diced

1 small jalapeno, finely diced

1 tbsp capers, roughly chopped

1 tbsp fresh dill, finely chopped

1 tbsp cilantro, finely chopped

¼ tsp chilli sauce

2 tbsp lemon juice

In a food processor roughly chop the smoked salmon. Add the other ingredients and pulse until fairly smooth.

All the ingredients in the blender.

Variations:

Reduce the amount of cream cheese you use and add non-fat yogurt instead, for a healthy spread.

If you don’t want a little spice in your mousse, simply omit the jalapeno and chilli sauce; it will still be delicious!

If you don’t have fresh dill, dried is fine. Chives also blend well into the mousse.

Dried dill and chives in the mousse.

Serve with crackers, bagels, baguette…the list goes on! Enjoy!
